Homemade Gilly burgers with sweet potato fries.

Preheat the oven to 200 degree c.

In a bowl mix together lean organic mince, with finely chopped onions, garlic, lots of herbs such as parsley and chives, spices and seasoning like ground pepper and a little salt.
Mix this altogether with your hands and add 1 egg to bind the ingredients together.
Cover and put to one side in the fridge for the flavours to marinade and the mixture to firm up.

Cut the sweet potatoes into wedges and place in a large bowl with olive oil, sea salt and some herbs. Spread the wedges out into a lightly greased baking tray and bake for 15-20 minutes or until golden brown around the wedges.

Back to the gilly burgers...
Heat 1 tablespoon of olive oil in a pan, turn the meat mixture into individual patties and add to the pan, fry for approximately 4 minutes until golden brown and just cooked through, be careful not to flatten the patties as this will squeeze out the juices and this is the best part!!

Serve with a side salad.
